Espresso Muffins

What would you give for that pop of coffee goodness with chunky dark chocolate all wrapped up in one package? A muffin that gives your morning that extra happy, happy feeling! 😁  I came up with a recipe that is a bit more healthy than your regular sugary sweet muffin. It has enough of sweet to make it real good and a secret ingredient that makes it real moist!

Espresso Muffins

1 Avocado- VERY ripe

1/4 cup Butter - softened

2 Eggs

2 3/4 cup Flour - scant

4 tsp. Baking Powder

3/4 cup Cane Sugar

1 tsp. Cinnamon

1/2 tsp. Salt

2 TBSP. Cocoa Powder

1 TBSP Instant Coffee - divided

1 TBSP Hot Water - divided

1 1/2 cup Dark Chocolate Chips


Topping:

1 cup of Whipped Cream

3 oz. Cream Cheese

Pinch of Cream of Tartar

Remaining Coffee 

Directions For Muffins:

Beat Avocado and Butter till smooth. Mix your Hot water and Coffee in a separate bowl. Add sugar and eggs to the Butter mixture. Then add half of your coffee mixture. Mix all remaining dry ingredients and slowly add. Stir in Dark Chocolate. Put in Muffin tins and bake at 350* for 15 to 20 minutes or till center comes out clean with a toothpick. 


Directions for Topping:

Whip up your cream till peaks form add in your cream of tartar. In another bowl cream your cream cheese till soft and smooth. Add your remaining coffee and mix. Fold in your whipped cream! Top your cooled muffins. Store in Refrigerator. Enjoy!😋
