Katrina's Cheesy Jalapeño Corn

Have you ever tried the Southern Jalepeño Corn? Have you tried just baked corn? Well my husband delights in corn. He loves corn on the cob, corn, baked corn, corn with butter, corn anything!😊 So when his birthday came around I decided to make him some of his favorite corn but combine it up a bit!


I took my favorite baked corn recipe and added some goodies to make this delectable Southern Dish. It has enough spice to make it nice and some cheese to say more please!

2 heaping cups of Corn

1 cup milk

2/3 cup cracker crumbs

2 tbsp. melted butter

1 large chopped Jalapeño 


tsp. salt

dash of black pepper

2 eggs

1 tsp. onion powder

1.5 cups of shredded cheese-divided

Mix all ingredients together. Liberally butter a cast iron pan and pour the goodies in. Top with 1/2 cup of cheese. Bake at 350* for 40 minutes or till golden brown and set.

I used half cream corn and half frozen kernel corn. I also used leftover grilled jalapeños so i think that added a smokey grilled zing!😁
